Robert F. Kennedy Jr. has decried the prevalence of chronic disease and the “mass poisoning” of Americans by food and it’s something we need to change. In Italy, gathering to share a meal with family and friends is an event that is anticipated and celebrated, and in every region, there is a style to the way they make Italian food.
Italians in Rome use different ingredients and techniques than Italians in the northern or southern parts of Italy, and let’s not forget Sicily! I was lucky enough to introduce my wife Christy Zagami to the secrets of Italian cooking during our time together living in Italy and she has done an excellent job in replicating the best authentic Italian dishes since we were forced to move here to America in 2019.
